Pork & Pear Traybake
INGREDIENTS
4 Pork medallion steaks
250g Baby beetroot, roughly chopped
4 carrots, quartered lengthways
2 pears, cored, cut into wedges
6-8 cloves garlic, whole
6 baby onions, whole, or 2 brown onions, quartered
2 tbsp olive oil
12-15 sage leaves
Salt and pepper, to season
Instructions
Place pork, vegetables and garlic in a roasting pan.
Drizzle with oil and toss to coat.
Arrange in a single layer, sprinkle sage leaves over, season and roast for 20 mins.
Remove pan from oven and sprinkle with extra fresh sage, if desired and serve.
