Rose Harissa Meatballs
Ingredients
500g lamb mince
2 tbsp Josh&Sue Rose Harissa Paste
1 tsp salt
1/4 cup finely chopped flat leaf parsley, plus extra to garnish
1 egg
1/3 cup breadcrumbs
1 tbsp extra virgin olive oil
4 tomatoes, finely chopped
Small bunch thyme
1 tbsp sugar
Method
Place the lamb, salt, parsley, egg and breadcrumbs in a large bowl and mix well to combine, roll into balls.
Heat oil in a large saucepan and cook meatballs for 3-4 minutes until browned. Add tomato, thyme, sugar and cook covered until meatballs are cooked through.
Serve with pasta of your choice, and garnish with parsley.
