Passionfruit Yo-Yos

INGREDIENTS

  • 170g unsalted butter, softened

  • 2/3 cup pure icing sugar, sifted, plus extra to dust

  • 1 tsp vanilla extract

  • 1/3 cup custard powder, sifted

PASSIONFRUIT FILLING

  • 1 cup pure icing sugar, sifted

  • 1 tbsp passionfruit pulp

  • Finely grated zest of 1 lime

Method

  1. Preheat oven to 180°C. Line 2 baking trays with baking paper.

  2. Beat the butter, sugar and vanilla until pale and fluffy. Beat in flour and custard powder until just combined.

  3. Roll mixture into balls (approx. 1 tbsp), place 3cm apart on prepared trays and gently press with a lightly floured fork. Bake for 14-16 minutes until just golden. Cool.

  4. To make the filling beat all ingredients together in a bowl to form a stiff icing. Spread over half the biscuits then sandwich with remaining biscuits. Dust with extra icing sugar to serve.
