Passionfruit Yo-Yos
INGREDIENTS
170g unsalted butter, softened
2/3 cup pure icing sugar, sifted, plus extra to dust
1 tsp vanilla extract
1/3 cup custard powder, sifted
PASSIONFRUIT FILLING
1 cup pure icing sugar, sifted
1 tbsp passionfruit pulp
Finely grated zest of 1 lime
Method
Preheat oven to 180°C. Line 2 baking trays with baking paper.
Beat the butter, sugar and vanilla until pale and fluffy. Beat in flour and custard powder until just combined.
Roll mixture into balls (approx. 1 tbsp), place 3cm apart on prepared trays and gently press with a lightly floured fork. Bake for 14-16 minutes until just golden. Cool.
To make the filling beat all ingredients together in a bowl to form a stiff icing. Spread over half the biscuits then sandwich with remaining biscuits. Dust with extra icing sugar to serve.
