Red Velvet Donuts

Looking for a great activity to keep the kids occupied? Nothing beats an afternoon in the kitchen. These red velvet doughnuts are delicious and easy to make. They won’t keep for long, and will crumble slightly if stored but we doubt they will last that long.

INGREDIENTS

  • 2 tbsp unsweetened cocoa

  • 3/4 cup plain flour

  • 1 tsp vanilla extract

  • 1/4 tsp red food colouring

For the cream cheese icing:

  • 1 cup icing sugar

  • 1 tbsp Camperdown Dairy Full Cream Milk

  • 1/2 tsp vanilla

  • 50 g cream cheese, softened

Method

  1. Preheat oven to 180°C.

  2. Sift cocoa, flour and baking powder into a mixing bowl, add sugar and salt.

  3. Make a well in the centre and add the egg, buttermilk, vegetable oil, milk and vanilla.

  4. Whisk together until the batter is just combined and smooth. Don't overmix.

  5. Lightly grease the holes of your doughnut pan with oil spray and add the batter, to about halfway up the pan.

  6. Bake for 8-9 minutes.

  7. Allow to cool for 10 minutes in the tin before transferring to a cooling rack to cool.

  8. Regrease tin to cook the remaining batter.

For cream cheese icing:

  1. Mix the sugar, milk and vanilla to a thick paste then add the cream cheese and beat until smooth and of dipping consistency.

  2. Dip one side of each doughnut, then transfer back to a rack to set.
