Brussel Sprouts with Bacon

Serves 4 | Cooking Time: Approx 20 minutes

Ingredients

  • 500g brussels sprouts, washed, trimmed and cut in half

  • 6 rashers Country Style streaky bacon

  • 2 cloves of garlic

  • 1 tbsp olive oil or butter

  • salt

  • Freshly ground black pepper

  • Flaky sea salt, for serving (optional)

Method

  1. Preheat oven to 200°. In a large oven-safe roasting dish cook bacon until crispy over medium heat. Drain on a paper towel-lined plate, then crumble. Keep some bacon fat in the dish. 

  2. Return to medium heat and add oil or butter. Add brussels sprouts and season generously with salt and pepper. Cook over medium heat until some golden caramelisation starts.

  3. Place in dish, and into the oven. Make sure there is some space between the sprouts- you don’t want them to steam!

  4. Roast until the brussels sprouts are crispy on the outside and tender on the inside about 10-15 minutes, shaking the pan halfway through. Check they are cooked through with a knife.

  5. Sprinkle with crumbled bacon and serve immediately.

Make it your own

For variation, remove the bacon and at step 1. Add a little extra butter to replace the bacon fat. Once cooked grate the zest of a lemon over and sprinkle with parmesan. Yum!
